Camels don't directly store water in their humps. They're humps are actually reservoirs of fatty tissue. When the tissue is metabolised, it produces more than 1 gram of water for every gram of fat processed. This fat metabolism, while releasing energy, causes water to evaporate from the lungs during respiration. The dromedary camel can drink as little as once every 10 days, even under very hot conditions, and can lose up to 30% of its body mass due to dehydration.
